Egg Salad

Ingredients

  • 2 slices of whole wheat bread
  • 1 ripe avocado, peeled and pitted
  • 1 tablespoon of lemon juice
  • Salt and pepper, to taste
  • 2 eggs
  • 2 teaspoons of butter or oil
  • 2 cups of baby spinach
  • Your choice of toppings, such as cheese, salsa, or hot sauce

An avocado toast with egg and spinach is a simple, tasty, and nutritious breakfast or snack.

Cooking Steps

    Toast the bread in a toaster or oven until golden and crisp.

    In a small bowl, mash the avocado with a fork and stir in the lemon juice, salt, and pepper.

    In a small skillet over medium-high heat, melt the butter or heat the oil and crack the eggs. Cook for about 3 minutes, or until the whites are set and the yolks are runny, or to your liking. Season with salt and pepper.

    In another small skillet over medium-high heat, wilt the spinach with a splash of water, stirring occasionally, for about 2 minutes, or until soft and bright green. Season with salt and pepper.

    Spread the avocado mixture evenly over the toast slices, and top with the fried eggs and the spinach. Add your choice of toppings if desired. Enjoy!
